Happenings

Well, I haven't been getting much sleep the last several nights. Julia made the transition to her room pretty good. Christy, however, has been waking up at about 1:00 every night and I have just been bringing her back in my room. Mark III got a new bed and he has fallen out about every night, so I have to go put him back in bed. So this morning one of my children said something about being ready to take a nap. I jumped on that and they took and early nap and I layed down, too.

My friend Jackie came over in the afternoon and we practiced our violins and chatted a little bit. Mark got to play with her two youngest boys. I am so glad he has some boys his age to play with in our church, since he is my only boy right now.

I got ambitous tonight and looked online for a recipe with red skin potatoes because we have a lot of them and we like them. I just don't know many ways to cook them. So I made a casserole called Potatoes Romanoff. Maybe I will post the recipe if it turns out right. As soon as my husband gets home, he is going to grill some Italian sausage to go with it.

My husband should be home any minute now, so I need to go get the rest of the things ready for supper!

  1. Red skinned potatoes make great mashed potatoes when you leave the skin on. Maybe you have already tried this, but I thought I would mention it. If you have never had them this way and it sounds different, you should try it anyway. They are really good and it is easy since you don't have to peel them.

  2. My hubby loves red skinned potatoes, and I agree, sometimes I leave the skins on and mash them too.
    Also a way I make potatoes-- chunk them (peeled or not) put butter in a casserole dish that can go in oven put potatoes in, then a lot more butter, then take parsley flakes and crunch them in your hand to be real small and sprinkle them all over the top. Cook at 350 for about an hour stirring them every once in a while so the butter and parsley gets on them as they cook. This is Brad's favorite potato.
